Living on the border has its cons. There is so much culture within the cuisine from Mexicans that remain strong and popular.
That is true. It is crazy to think that in some point of history, conquistadores tried to take away that culture in food to implement their own. To this day, there are some mixtures of Mexican and Spanish cuisine.

I wonder what types of food and agriculture was mixed into the Mexican cuisine and culture. I must have been hard to incorporate things that they did not know and were forced to use in their daily lifes.
Actually, the conquistadores gave natives handouts of food and alcohol to make them dependent on them as well as limiting firearms to avoid any succesful raids.

That is quite intersting. However it is obvious that Mexican cuisine in North America has changed drastically. Some foods have been shamed because it has a false Mexican title.
Yes, in fact. However, this has been taken from tajanos/as and people from New Mexico, California, etc, and have been converted into their own recipes and have been used by their descendants for so many years. There are a lot of American dishes that include a little bit uf "Mex" in it and a lot of people in the south of the U.S have embraced its use.
